Program Description
Greystone College’s Tourism & Hospitality Management Diploma program is an
intensive diploma program designed specifically to
meet the vast employment needs, both staff and managerial, in the global tourism, hospitality, resorts and conventions markets.
Our aim is to
provide our graduates with the knowledge and skills necessary to
choose their career path and secure rewarding and successful employment in
an industry that is expanding and vibrant.
Career Opportunities
Opportunities are constantly growing in entry-level, supervisory and management roles. Global competition is forcing the industry to raise its professional standards. Upon successful completion of this program,
graduates will be qualified to work in hotels, motels, resorts, restaurants, convention centres and on cruise ships.
Program Length
36 weeks (27 hours per week)
Class hours:
Monday to Thursday: 8:30am to 3:30pm (with 1 hour lunch)
Fridays: 8:30am to 12noon.

Course Details
Each course is three weeks in duration. The curriculum is subject to change. The diploma program includes all 12 courses. Students are allowed to take individual courses and get a Certificate of Completion for the courses.
Supervision in the Hospitality Industry
This course is designed to provide students with the principles of
supervision as they apply specifically to the hospitality industry.
Managing Front Office Operations
This course presents a systematic approach to front office
procedures by detailing the flow of business through a hotel,
from the reservations process to checkout and account settlement.
The course also examines the various elements of effective front
office management, paying particular attention to the planning
and evaluation of front office operations and to human resources
management. Front office procedures and management are
placed within the context of the overall operation of a hotel.
Managing Technology in the Hospitality Industry
Provides an overview of the information needs of lodging
properties and food service establishments; addresses essential
aspects of computer systems, such as hardware, software, and
generic applications; focuses on computer-based property
management systems for both front office and back office
functions; examines features of computerized restaurant
management systems; describes hotel sales computer applications, revenue management strategies, and accounting applications; addresses the selection and implementation of computer systems; focuses on managing information systems; and examines the impact of the Internet and private intranets on the hospitality industry.
Housekeeping Management
This course presents a systematic approach to managing
housekeeping operations in the hospitality industry.
Managing Service in Food & Beverage Operations
This course provides students with practical skills and knowledge
for effective management of food service operations. It presents
basic service principles while emphasizing the importance of
meeting and, whenever possible, exceeding the expectations
of guests.
Hospitality Financial Accounting
This course presents basic financial accounting concepts and explains how they apply to the hospitality industry.
Hospitality Sales & Marketing
This course is designed to provide students with a solid background in hospitality sales and marketing. The main focus
is on practical sales techniques for selling to targeted markets.
Convention Management Services
Defines the scope and segmentation of the convention and group business market, describes marketing/sales strategies to attract markets with specific needs, and explains techniques to meet those needs.
International Human Resource Management in the
Hospitality Industry
Issues of human resources are addressed from the unique
perspectives of twenty countries that have a major hospitality
industry presence. This course examines cultural differences that
affect the workplace, societal work values, labor market issues,
and the legal environment in each country, from China to the
United States, as it relates to the hospitality industry.
Hospitality & Tourism Marketing
This course will give students an understanding of marketing in the hospitality and tourism sectors. It looks at marketing from a guest service perspective and covers topics that include the development of hospitality and tourism marketing, the challenges of marketing services, individual and corporate guest behavior, market research, market segmentation, target marketing and positioning, ethics and law, the elements of a hospitality and tourism marketing mix, and the future of hospitality and tourism marketing.
International Hotel Management
This course provides the background every graduate will need in today’s rapidly changing global marketplace. It prepares students to plan, develop, market, and manage hotels in the international arena. It gives students a solid foundation for understanding and managing cultural diversity in the workplace, and underscores the importance of protocol in international interactions.
Fundamentals of Destination Management & Marketing
This course will give students a basic understanding of the roles
played by destination management organizations (DMOs) and
convention and visitors’ bureaus (CVBs) in the tourism industry. All aspects of organization operations are covered, including service, research, product development, human resources, and financial management.
